Vegan Plantain Pancakes Recipe

This recipe is vegan and might seem new to you but it is very easy to make, as it is delicious and fluffy. It is made with a mixture of mashed ripe plantains, corn flour dough, ginger, salt, onion, andpeppers. It can be served with stewed fruits, scrambled tofu,custards, or any toppings of your choice. If you love trying out new recipes, then you should try this one out, as it is for everyone including non-vegans.

INGREDIENTS

2 ripe plantains

 2 cups corn flour-dough (Cornflour mixed with water only)

 1 onion

2 large peppers

225 ml water

½ teaspoon salt

Small piece of ginger

Oil for frying (You can use any oil brand of your choice)

INSTRUCTIONS

Mash the plantains until smooth and free from lumps.

Blend onion, ginger, and peppers.

Mix blended ingredients with mashed plantains. Add the corn dough, salt, and water.

Mix thoroughly and let stand aside to ferment for 2 hours.

 Fry by spoonfuls in hot oil on both sides till the inside is cooked.

Serve hot.
